HEALTHY PUMPKIN QUINOA MUFFINS
(no white flour, no butter, no white sugar)
1 cup whole wheat flour
1 cup almond meal
1/2 cup brown sugar, packed
1/2 cup agave
1.5 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
(or sub 2 tsp. pumpkin pie spice for 2 previous ingredients)
1/2 tsp salt
1 cup canned pumpkin
1/2 cup canola oil
1 cup quinoa, cooked
1 1/2 tsp vanilla extract
Preheat oven to 375*F
Coat muffin tin with non-stick cooking spray or line muffins cups.
Combine all ingredients in mixing bowl; blend well.
Pour batter evenly into muffin tins.
Bake for approx 25-30 minutes until muffins are cooked through. Be careful to not overcook.
They should be moist to slightly "wet" in the center.
Allow to cool before enjoying.
Makes 24 full size muffins or 48 mini muffins
